Pork Carnitas Tacos

Inspired by one of our favorite recipe developers @pinchofyum, we tried our hand at some pork carnitas tacos, just in time for the ultimate #TacoTuesday – Cinco de Mayo!





  • Tongs
  • Nonstick Sheet Pan
  • 6-Quart Slow Cooker


  • 4 lbs. pork shoulder
  • 5 garlic cloves
  • 1 tsp. of salt, cumin, chili powder, black pepper & oregano
  • 1/4 tsp. cinnamon & cayenne pepper
  • juice of 2 limes
  • 1/2 c. orange juice
  • 1/2 c. salsa
  • 12 oz. Merman NY IPA or Mermaid Pilsner can*
  • + your favorite toppings (avocado, cilantro, radishes, plain yogurt, lime)
  • *Use Merman for a citrusy, smoky flavor, and Mermaid for a slightly hoppy, spicy profile.

  1. Place the pork shoulder in the slow cooker. Chop garlic and place in the slow cooker.
  2. Sprinkle and rub salt, cumin, chili powder, black pepper, oregano, cinnamon, and cayenne onto the pork.
  3. Add lime and orange juice, salsa, and beer. Cover, cook on low for 8 hrs.
  4. Shred meat in the slow cooker (or take out, shred, and replace in sauce). It should fall apart.
  5. Preheat broiler, line a baking sheet with aluminum foil. Place shredded meat on sheet pan with tongs and pour a few tbsp. of sauce on top. Broil for 5 mins., pork will brown on edges.
  6. Serve on tortillas with your fav toppings. Our go-tos are avocado, plain yogurt, radishes, cilantro and lime!

Mermaid Pilsner Pizza Crust. 


  • 3 cups unbleached flour
  • 1/2 tsp salt
  • 1 Tbsp baking powder
  • Olive Oil
  • 1 (12 oz.) can of Mermaid Pilsner
  • Your favorite pizza toppings!

  1. Preheat the oven to 450 degrees.
  2. Combine the dry ingredients into a large bowl and mix well.
  3. Pour in the Mermaid Pilsner and mix well, the dough will be sticky.
  4. Spread a handful of flour onto your work surface.
  5. Place the dough on surface to coat with flour and prevent it from sticking.
  6. Knead dough 2 – 3 times until pliable. Shape into 2 rounds for thin crust, 1 for deep dish. 
  7. Spread a thin layer of oil onto pizza stone or baking sheet, work the dough into a 12″ circle using a rolling pin and place onto greased pan.
  8. Lightly brush the crust with olive oil, then add favorite sauce and toppings.
  9. Bake for 12 – 15 minutes, or until golden brown on top.
